Ingredients

Assorted vegetables, such as bell peppers, zucchini, cherry tomatoes, mushrooms, and red onion. Olive oil. Salt and pepper, to taste. Herbs or spices (optional), such as garlic powder, paprika, or Italian seasoning. Wooden skewers, soaked in water for 30 minutes.

Instructions

Prepare the Vegetables: Wash and chop the assorted vegetables into bite-sized pieces. Bell peppers and onions can be cut into squares, while zucchini can be sliced into rounds.

Assemble the Skewers: Thread the chopped vegetables onto the soaked wooden skewers, alternating colors and varieties for a vibrant presentation.

Season the Skewers: Brush the assembled skewers with olive oil and season with salt, pepper, and desired herbs or spices. This adds flavor and enhances the natural sweetness of the vegetables.

Cook Over Campfire: Prepare a campfire and let the flames die down to hot coals. Place the skewers on a grill grate over the coals or directly on a flat rock near the fire.

Grill the Skewers: Cook the veggie skewers for 10-15 minutes, turning occasionally, until the vegetables are tender and lightly charred.

Serve: Carefully remove the hot skewers from the fire. Transfer them to a serving platter and serve immediately. Enjoy the delicious and smoky flavors of campfire veggie skewers!

Tips

Metal skewers are used for durability and easy cooking over the fire. Experiment with different vegetable combinations and seasonings to suit your taste preferences. Serve the veggie skewers with rice, quinoa, or a fresh salad for a complete outdoor meal.
