If you’re a shrimp lover, you’re going to appreciate this tasty recipe we have for you to try. Found on one of our favorite camping food websites, The Dirty Gourmet, These grilled shrimp skewers are sure to please your taste buds.
Here’s what you’ll need:
- 1 tablespoon extra virgin olive oil
- 2 tablespoons lime juice
- 1-2 chipotle peppers, minced
- 1 pound uncooked medium shrimp, peeled and deveined
- pinch of salt
- Large bowl or zip top plastic bag
- Skewers
- Grate or barbeque
- Firewood or Coal
- Matches
- Tongs
- Aluminum foil
Now, first things first – Get your camp fire started. Next, combine all your ingredients in a bowl or zip-top plastic bag. You’ll want to marinate for about 30 minutes. Once your delicious little shrimps have completed infusing with flavor, assemble them onto the skewers. You could actually skewer them first and then marinate if you have a container large enough to hold them once skewered.
Next, place a grate over your campfire. You may want to find some rocks if your grate does not have legs. Cook the shrimp directly on the grate, turning once with tongs. A good rule of thumb is 2-3 minutes per side, or until they turn pink and translucent. We’re pretty sure you’re not going to have any leftovers, but if you do you can wrap them in foil and store in your cooler. Now, you have some choices… You can bring the leftovers to Johnson RV and share your delicious appetizer with us, or you can eat them as a late night snack yourself or for breakfast the next morning.
